Processing:
Step 1. For a green hand, prepare the Gelatin solution, Put gelatin 4.8 and water 9.5kg mixing with warm water or cold water in an independent tank. (cold water not easy to agglomeration, the water temperature can not be high) , when the mixture fully mixed, put this tank to the hot water standby (you can put the tank in the hot-water generation tank).
For an expert, the gelatin solution can be prepared in the gelatin dissolving cooker.

Step 2. Put the materials in line, 5kg water–>240g Citric acid–>200g Sodium citrate–>14kg glucose–>17kg sugar to the sugar dissolving cooker, start heating to 114°C, then stop heating, check the Brix with the syrup hydrometer, Brix range 80%-82% will be fine (without gelatin at this stage).

Step 3. Open the valve of the sugar dissolving cooker, pumping the mixture to the buffer tank, Open the buffer tank valve, then open the transfer pump, pumping the syrup to mixing tank ① OR ② (alternate use, ensure continuous production) for cooling.

Step 4. When the syrup temperature cooled to 80~90°C, mixing the gelatin solution together. When mixing completely, it’s ready for pumping to the depositing hopper.
Part 6. Pectin based Jelly candy formula and processing

Processing:
Step 1. Pour 12kg water into the pectin dissolving cooker, add 150g Citric acid, 160g Sodium citrate(Part A), start heating, set the temperature controlling with 180°C, when the upper materials completely dissolved, add the dry mixed pectin powder and sugar gradually. (Part C). Start the stirring until boiling. Remain boiling for 2~3mins, ensure all materials completely dissolved.
Step 2. Stop stirring and heating, move the mixture to the sugar dissolving cooker, add the 12kg glucose(Part B), start heating and stirring, set the oil temperature to 180°C, when the glucose completely dissolved, add 17kg sugar( Part B), keep heating, when the syrup temperature reaches around 105°C, check the Brix with the syrup hydrometer, Brix no lower than 78% (Brix range 78%~84%), stop the sugar dissolving cooker, open the bellow valve, start the syrup pump(in the cooking unit controller box), pumping the syrup to buffer tank, at the same time, start buffer tank stirring.
Step 3. Open the buffer tank valve, then open the transfer pump, pumping the syrup to mixing tank ① OR ② (alternate use, ensure continuous production), when the syrup temperature reaches 110°C, it’s ready for pumping to the depositing hopper.
Part 7. The depositor operation steps
Step 1. Connect the main power, switch on the touch screen key, open the start button.
Step 2. Click temperature settings set the temperature numbers and start heating, this is the 1st operation when open the line. (the same setting for the cooking unit, open the hot water heating)

Step 3. Return to the main menu, click parameter settings, the above 8 parameters already set up well before delivery. Set the 1# depositor weight and 2# depositor weight.

Step 4. Open Mixing tank 1 and 2 discharge valve.
Step 5. Flow chat 1, click syrup pump, settle the numbers, the bigger the numbers, the faster the speed. Then check the syrup going into the hopper or not, if the syrup just enters the hopper, open mixer 1 and mixer 2, Flavor 1~6. Let the syrup mixing with the Flavor, color, acid.

Step 6. When the syrup-filled half the hopper, put the water pan to the drainage tray. Let the water pan in the middle of depositing nozzles and molds.

Step 7. Settle the numbers for Main driver, when the mold moving, click Oil sprayer.

Step 8. Click Depositor 1 motor and Depositor 2 motor, check the depositor nozzles running situation. If the nozzles running well, then close depositor 1&2 motors.
If depositor nozzles go wrong, then contact our engineer team for adjustment.

Step 9. Withdraw the water pan, then Open Mold up/down, open depositor 1&2 motors again. The syrup shall be dropped in the molds cavities.
Step 10. Open the cooling tunnel controller box, start the cooling tunnel.
Step 11. Check the molds, when the molds closed to the de-molding brush, start the brush motor button. Then start the Conveyor button, transfer the candies to the coating machine.

Step 12. Run the Sugar coating machine, open all switches on the coating machine, adjust the drum speed. Waiting for the sugar-coated candies came out from the machine.

Part 8. Gummy candy making machine Cleaning notes
Cleaning Note:
When the production stopped, need to wash the cookers and depositor. To keep healthy and Avoid the syrup blocking the depositing nozzles.
The washing process is the same as cooking.
Step 1. Start the Cleaning button.
Step 2. Pour water into the dissolving cooker. Start heating and stir. When the water reaches around 80°C, transfer to other cookers for cleaning
Step 3. After all the cookers cleaned, pumping hot water to the depositor hopper.
Step 4. When the hopper cleaning work is done, put the water pan in the middle of the hopper and molds. Discharge the waters.
